The municipality of Comalcalco, in the southeastern state of Tabasco, boasts the highest levels of cocoa production in Mexico. This region was home to the ancient Olmec and Mayan civilizations, whom introduced the word “kakawa,” or cocoa, to the world. And it is in this region that Wolter Chocolates now cultivates over 66-acres of cacao plantations.
The story of Wolter Chocolates story is one of perseverance and passion for celebrating Mexican fine chocolate making.
It all began when Alejandro Campos and his wife Ana Parizot Wolter, witnessed how tourists appreciated Belgian chocolate while traveling in that country. The couple asked themselves, “how is it that out of the five countries that boasted the best chocolate in the world, not a single one cultivates even one acre of cocoa?”
That question drove them to create something special. Through hard work, Wolter Chocolates has become the most awarded Mexican chocolate maker in the world, being recognized with a total of 54 international awards. Their award-winning chocolate – Quetzalli, contains cardamom and chicatana salt, which is made of ants.
“When you buy a bar of Quetzalli, you're getting a piece of Mexico, a piece of the cocoa. You're not just walking away with a chocolate bar, you're taking a little piece of Mexican history, tradition and culture,” Alejandro Campos, Wolters Chocolate owner said.

The seeds of the cacao tree have a bitter taste and must first be fermented to develop flavor. After fermentation the beans are dried, cleaned and then roasted. The shell of the cacoa bean is removed to produce cacao nibs. The nibs are then ground to produce cocao mass or pure chocolate in a rough form.
Real chocolate always contains cocoa butter which is the fat derived from the cocoa bean. The proper term for fake chocolate is "compound chocolate". Compound chocolate is chocolate without cocoa butter.
Dark chocolate is loaded with nutrients that can positively affect your health. Made from the seed of the cocoa tree, it is one of the best sources of antioxidants on the planet. Studies show that dark chocolate (not the sugary crap) can improve your health and lower the risk of heart disease.

Cacao powder is made from a dried paste of pressed cacao nibs, which concentrates that dark chocolate flavor even further.
